Background

Getting to know string cheese

String cheese sits in the dairy & eggs section of our food guide. The USDA FoodKeeper database files it under the name “String Cheese”. Going by USDA FoodKeeper, it lasts 5 months in the fridge. It falls into the lower-risk group, so storing it well is mostly about keeping quality rather than about safety. Best storage spot: choose a middle shelf over the door, which warms up each time someone opens it.

Cheese is essentially milk preserved with acid and salt, with much of its moisture pressed out, which is why it lasts far longer than milk does. Moisture is the biggest factor in its shelf life: hard, aged cheeses can keep for weeks or months, whereas fresh and soft cheeses act more like fresh dairy and last anywhere from a few days to about two weeks once opened.

How long does string cheese last in the freezer?

Not listed. FoodKeeper does not list a freezer time for string cheese.

How long does string cheese last at room temperature?

Room-temperature storage does not suit it; keep it in the fridge.

How long is string cheese good after the expiration date?

String cheese kept in good conditions is generally still safe after its best-by date. Before use, inspect the odor, appearance and flavor.

How do you know if string cheese is bad?

A sharply sour or ammonia smell, stronger than that cheese normally has. A slimy surface, or cheese that has dried out and cracked right through. Edges that have yellowed or darkened, or colors that don't belong to that style of cheese.

How to spot spoiled string cheese

Odor

A sharply sour or ammonia smell, stronger than that cheese normally has.

Texture

A slimy surface, or cheese that has dried out and cracked right through.

Color

Mold

On hard cheese, cut away at least 1 inch around and below the spot. Soft or shredded cheese should be thrown out.

Inspect your string cheese and tick each warning sign you see

No boxes ticked? That's encouraging. Even so, confirm how long it has been stored, because the germs behind food poisoning can't be seen with the naked eye.

Even one of these means it has spoiled. Toss it, and never taste it to find out.

What's happening

What makes string cheese spoil

Cheese most often spoils by growing mold. In hard cheese the mold can't push its roots very deep, so it is fine to cut off at least 2.5 cm (1 inch) around and beneath the spot. In soft, crumbled or shredded cheese, mold can spread invisibly through the whole thing, so all of it should go in the trash. Soft cheese that is past its prime also starts to smell of ammonia as bacteria break it down.

Don't do this

Mistakes people make storing string cheese

  • Sealing it tightly in plastic wrap, which holds in moisture and invites slime and mold.
  • Trimming mold off shredded or soft cheese and eating what's left.
  • Leaving a cheese board out in a warm room for hours.
  • Freezing soft cheese and expecting it to come out with the same texture.
Freezer

Can you freeze string cheese?

No FoodKeeper timeFoodKeeper does not list a freezer time for string cheese.
  1. 1Step 1

Cut it into pieces of ½ lb or smaller, or put shredded cheese in the freezer right in its bag.

  2. 2Step 2

Wrap it in plastic and then a freezer bag, pressing the air out.

  3. 3Step 3

Defrost it in the fridge; the texture turns crumblier, so melt it or cook with it.

Room temperature · 2-hour rule

String cheese left out overnight

String cheese is low-risk, yet a night on the counter eats into its remaining fridge time. Put it back in the cold and plan to finish soon.

How to store it

Keeping string cheese in good shape

  • Wrap it first in parchment or wax paper, then add a loose layer of plastic so the cheese can breathe.
  • Keep it in the cheese drawer or on a low shelf at 40°F (4°C) or colder.
  • Cut with a clean knife every time so you don't carry mold spores into it.
Package dates

What the dates on string cheese packaging mean

Best-by vs. sell-by

Counting from the purchase date, FoodKeeper allows unopened string cheese 5 months in the refrigerator. Labels such as "best-by" and "sell-by" are about peak quality and how stores rotate stock, not about safety — infant formula is the one product whose use-by date federal law requires.

Past the printed date

String cheese kept in good conditions is generally still safe after its best-by date. Before use, inspect the odor, appearance and flavor.

Shopping

Choosing good string cheese at the store

  • For longer life, buy a block of hard cheese instead of the pre-shredded kind.
  • Make sure packages are sealed, with no moisture or mold visible inside.
  • Choose a size of soft cheese you will use up within its opened window.
Waste less

String cheese: ways to finish it in time

  • Shred hard cheese and freeze it for cooking.
  • Melt it into sauces, grilled cheese sandwiches, gratins and omelets.
  • Before its time runs out, fold soft cheese into pasta, a dip or a baked dish.

String cheese myths: fact or fiction?

  1. 1.As long as it smells okay, string cheese is still safe after being refrigerated longer than 5 months.
    You got it!
    Not this time.

Partly true. Because string cheese is low-risk, going slightly beyond 5 months usually costs quality rather than safety. Look for mold and sniff for off odors first.

  2. 2.Putting string cheese in the freezer kills any bacteria on it.
    You got it!
    Not this time.

False. The freezer puts bacteria on hold rather than killing them. They start up again as the food warms, so let it thaw in the fridge, then cook or reheat it all the way through.

  3. 3.String cheese holds up well in the freezer.
    You got it!
    Not this time.

Partly. FoodKeeper does not list a freezer time for string cheese.

  4. 4.String cheese can be kept in the fridge door.
    You got it!
    Not this time.

False. Each time the fridge is opened, the door heats up. Choose a middle shelf over the door, which warms up each time someone opens it.

  5. 5.String cheese has to go in the fridge to stay safe.
    You got it!
    Not this time.

Not for safety reasons, but refrigeration keeps it at peak quality for longer. Go by the storage times listed on this page.

Reader questions

String cheese: frequently asked questions

How long does string cheese last in the fridge?
String cheese lasts 5 months when refrigerated at 40°F (4°C) or colder. That figure comes from USDA FoodKeeper.
Can you freeze string cheese?
FoodKeeper does not list a freezer time for string cheese.
How can you tell if string cheese has gone bad?
Odor: a sharply sour or ammonia smell, stronger than that cheese normally has; Texture: a slimy surface, or cheese that has dried out and cracked right through; Color: edges that have yellowed or darkened, or colors that don't belong to that style of cheese.
Does string cheese go bad after the printed date?
String cheese kept in good conditions is generally still safe after its best-by date. Before use, inspect the odor, appearance and flavor.
What is the source for these storage times?
They come from USDA FoodKeeper, the food storage database run by the USDA Food Safety and Inspection Service (FSIS). We last checked this page against the current FoodKeeper release.
What temperature is best for storing string cheese?
Set the fridge to 4°C (40°F) or below and the freezer to -18°C (0°F). The dial on a lot of fridges is optimistic and the real temperature runs higher, so a cheap appliance thermometer is money well spent. A fridge running even a few degrees above 4°C will noticeably eat into the 5 months fridge window for string cheese.
What should I store string cheese in?
Use parchment or wax paper inside a loosely closed bag, in the cheese drawer. You want to block air and moisture, keep smells from traveling to other food, and be able to tell at a glance how old the food is. Jot the date on the lid or on a label so there is never any guesswork about its age.
Is the fridge door a good spot for string cheese?
Ideally, no. The door already runs warmer than the rest of the fridge, and it heats up further each time the fridge is opened. Choose a middle shelf over the door, which warms up each time someone opens it.
Can you refreeze string cheese?
Yes, but only when it defrosted in the refrigerator and has not sat out at room temperature. Anything defrosted in the microwave or a cold-water bath needs to be cooked before it goes back into the freezer. Quality drops a little with every freeze-and-thaw round, so freeze in portions you'll use in one go.
Does freezing kill bacteria in string cheese?
No. At -18°C (0°F), bacteria stop multiplying, but they aren't killed off. Once string cheese thaws, any bacteria that were there wake up again, so defrost in the fridge and, where relevant, bring it up to a safe temperature when you cook or reheat it.
If string cheese smells okay but is beyond the storage time, is it still safe?
With a low-risk food such as string cheese, going beyond the storage time generally affects quality rather than safety. Look for mold, sniff for off odors and notice any strange taste, and get rid of it if anything seems wrong.
