The short answer

Brie lasts 1–2 weeks in the refrigerator, 6 months frozen, and only 2 hours out of the fridge.

Pip looking relaxed: this one keeps well

USDA FoodKeeper lists brie under “Cheese (soft such as brie, bel paese, goat)”, so this page uses that entry's storage times.

Test the timing on your brie

Time on the counter so far…

Refrigerate now

Well within the 2-hour limit. Get it into the fridge right away, spread out in a shallow dish so it chills fast.

Chill it now

OK at ordinary room temperature. If it is hotter than 32°C (90°F), though, the limit shrinks to just 1 hour, so get it into the fridge at once.

Right at the limit

The USDA cut-off is two hours. If the room was warm, or you can't say for certain how long it has been, throw it out.

Throw it out

This is over the 2-hour limit, and bacteria could have grown, or made toxins that a round of reheating won't destroy.

Toss it

Brie left out overnight has sat for hours on end between 4°C and 60°C (40–140°F), the danger zone. Appearance is no guide here: it isn't safe to eat.

Anything warmer than 4°C (40°F) counts as room temperature. When it's hotter than 32°C (90°F), the limit drops to 1 hour.

Peak quality

Held at -18°C (0°F), brie is comfortably inside the 6 months quality window. Defrost in the fridge, then use it over the following day or two.

Peak quality

Held at -18°C (0°F), brie is comfortably inside the 6 months quality window. Defrost in the fridge, then use it over the following day or two.

Use it up soon

Safe, though it is reaching the end of peak quality. Plan to use it within a few weeks, since flavor and texture decline after 6 months.

Safe, but quality has slipped

Staying frozen solid keeps food safe with no time limit, but by 9 months you can expect flat flavor and some freezer burn. Use it in soups, sauces or baking, and cut away any dry gray patches.

Background

Getting to know brie

Brie sits in the dairy & eggs section of our food guide. USDA FoodKeeper lists brie under “Cheese (soft such as brie, bel paese, goat)”, so this page uses that entry's storage times. Going by USDA FoodKeeper, it lasts 1–2 weeks in the fridge and 6 months in the freezer. As with any perishable food, it shouldn't spend more than 2 hours at room temperature. Best storage spot: choose a middle shelf over the door, which warms up each time someone opens it.

Cheese is essentially milk preserved with acid and salt, with much of its moisture pressed out, which is why it lasts far longer than milk does. Moisture is the biggest factor in its shelf life: hard, aged cheeses can keep for weeks or months, whereas fresh and soft cheeses act more like fresh dairy and last anywhere from a few days to about two weeks once opened.

Your brie storage questions

How long does brie last in the fridge?

1–2 weeks when held at 4°C (40°F) or below. Start counting on the day it was bought, opened or cooked.

How long does brie last in the freezer?

6 months at -18°C (0°F) for peak quality. It remains safe for as long as it stays frozen; past that point, flavor and texture slowly decline.

How long does brie last at room temperature?

2 hours at most, or 1 hour if the air is above 32°C (90°F). Throw out perishable food that has been out longer than that.

How long is brie good after the expiration date?

With perishable brie, time in storage counts for more than whatever the label says. Once it has spent longer than 1–2 weeks in the fridge, throw it out — even if the printed date hasn't arrived yet.

How do you know if brie is bad?

A sharply sour or ammonia smell, stronger than that cheese normally has. A slimy surface, or cheese that has dried out and cracked right through. Edges that have yellowed or darkened, or colors that don't belong to that style of cheese.

How long can brie sit out?

At room temperature the limit is 2 hours, dropping to 1 hour when the temperature tops 32°C (90°F). A whole night out is never safe.

Color

Mold

On hard cheese, cut away at least 1 inch around and below the spot. Soft or shredded cheese should be thrown out.

Inspect your brie and tick each warning sign you see

No boxes ticked? That's encouraging. Even so, confirm how long it has been stored, because the germs behind food poisoning can't be seen with the naked eye.

Even one of these means it has spoiled. Toss it, and never taste it to find out.

Full guide: does brie go bad? →

What's happening

What makes brie spoil

Cheese most often spoils by growing mold. In hard cheese the mold can't push its roots very deep, so it is fine to cut off at least 2.5 cm (1 inch) around and beneath the spot. In soft, crumbled or shredded cheese, mold can spread invisibly through the whole thing, so all of it should go in the trash. Soft cheese that is past its prime also starts to smell of ammonia as bacteria break it down.

Don't do this

Mistakes people make storing brie

  • Sealing it tightly in plastic wrap, which holds in moisture and invites slime and mold.
  • Trimming mold off shredded or soft cheese and eating what's left.
  • Leaving a cheese board out in a warm room for hours.
  • Freezing soft cheese and expecting it to come out with the same texture.
Freezer

Can you freeze brie?

Yes, in cooked dishes — 6 monthsHeld at 0°F / -18°C, it keeps its quality for roughly 6 months. Expect the texture to change, so plan to cook or bake with it.
  1. 1Step 1

Cut it into pieces of ½ lb or smaller, or put shredded cheese in the freezer right in its bag.

  2. 2Step 2

Wrap it in plastic and then a freezer bag, pressing the air out.

  3. 3Step 3

Defrost it in the fridge; the texture turns crumblier, so melt it or cook with it.

Defrosting

Safe ways to defrost brie

In the refrigerator

Move it from freezer to fridge the evening before you need it; this preserves the texture best.

On the counter

Suitable only for shelf-stable foods; perishables should never be thawed at room temperature.

Straight from frozen

Plenty of foods can go directly into the oven, a soup, a sauce or a smoothie.

Room temperature · 2-hour rule

Brie left out overnight

Brie kept out at room temperature beyond 2 hours (just 1 hour once the room tops 90°F / 32°C) should go in the trash. Bacteria grow fastest anywhere from 40°F to 140°F, and some of the toxins they leave behind survive reheating.

How to store it

Keeping brie in good shape

  • Wrap it first in parchment or wax paper, then add a loose layer of plastic so the cheese can breathe.
  • Keep it in the cheese drawer or on a low shelf at 40°F (4°C) or colder.
  • Cut with a clean knife every time so you don't carry mold spores into it.
Package dates

What the dates on brie packaging mean

Best-by vs. sell-by

Counting from the purchase date, FoodKeeper allows unopened brie 1–2 weeks in the refrigerator. Labels such as "best-by" and "sell-by" are about peak quality and how stores rotate stock, not about safety — infant formula is the one product whose use-by date federal law requires.

Past the printed date

With perishable brie, time in storage counts for more than whatever the label says. Once it has spent longer than 1–2 weeks in the fridge, throw it out — even if the printed date hasn't arrived yet.

Shopping

Choosing good brie at the store

  • For longer life, buy a block of hard cheese instead of the pre-shredded kind.
  • Make sure packages are sealed, with no moisture or mold visible inside.
  • Choose a size of soft cheese you will use up within its opened window.
Waste less

Brie: ways to finish it in time

  • Shred hard cheese and freeze it for cooking.
  • Melt it into sauces, grilled cheese sandwiches, gratins and omelets.
  • Before its time runs out, fold soft cheese into pasta, a dip or a baked dish.

Brie myths: fact or fiction?

  1. 1.As long as it smells okay, brie is still safe after being refrigerated longer than 1–2 weeks.
    You got it!
    Not this time.

False. Food-poisoning bacteria seldom alter how food smells. Keep to the 1–2 weeks window and discard anything older.

  2. 2.Putting brie in the freezer kills any bacteria on it.
    You got it!
    Not this time.

False. The freezer puts bacteria on hold rather than killing them. They start up again as the food warms, so let it thaw in the fridge, then cook or reheat it all the way through.

  3. 3.Brie holds up well in the freezer.
    You got it!
    Not this time.

Partly. Held at 0°F / -18°C, it keeps its quality for roughly 6 months. Expect the texture to change, so plan to cook or bake with it.

  4. 4.Brie can be kept in the fridge door.
    You got it!
    Not this time.

False. Each time the fridge is opened, the door heats up. Choose a middle shelf over the door, which warms up each time someone opens it.

  5. 5.Reheating brie thoroughly makes it safe after a night left out.
    You got it!
    Not this time.

False. Certain bacteria produce toxins that heat cannot destroy. Reheating kills the bacteria themselves but leaves those toxins behind, so anything left out longer than 2 hours belongs in the trash.

Reader questions

Brie: frequently asked questions

How long does brie last in the fridge?
Brie lasts 1–2 weeks when refrigerated at 40°F (4°C) or colder. That figure comes from USDA FoodKeeper.
Can you freeze brie?
Held at 0°F / -18°C, it keeps its quality for roughly 6 months. Expect the texture to change, so plan to cook or bake with it.
How long can brie sit out?
The limit is 2 hours at room temperature, cut to 1 hour when it is hotter than 90°F (32°C). Past that point, throw it out.
How can you tell if brie has gone bad?
Odor: a sharply sour or ammonia smell, stronger than that cheese normally has; Texture: a slimy surface, or cheese that has dried out and cracked right through; Color: edges that have yellowed or darkened, or colors that don't belong to that style of cheese.
Does brie go bad after the printed date?
With perishable brie, time in storage counts for more than whatever the label says. Once it has spent longer than 1–2 weeks in the fridge, throw it out — even if the printed date hasn't arrived yet.
What is the source for these storage times?
They come from USDA FoodKeeper, the food storage database run by the USDA Food Safety and Inspection Service (FSIS). We last checked this page against the current FoodKeeper release.
What temperature is best for storing brie?
Set the fridge to 4°C (40°F) or below and the freezer to -18°C (0°F). The dial on a lot of fridges is optimistic and the real temperature runs higher, so a cheap appliance thermometer is money well spent. A fridge running even a few degrees above 4°C will noticeably eat into the 1–2 weeks fridge window for brie.
What should I store brie in?
Use parchment or wax paper inside a loosely closed bag, in the cheese drawer. You want to block air and moisture, keep smells from traveling to other food, and be able to tell at a glance how old the food is. Jot the date on the lid or on a label so there is never any guesswork about its age.
Is the fridge door a good spot for brie?
Ideally, no. The door already runs warmer than the rest of the fridge, and it heats up further each time the fridge is opened. Choose a middle shelf over the door, which warms up each time someone opens it.
Can you refreeze brie?
Yes, but only when it defrosted in the refrigerator and has not sat out at room temperature. Anything defrosted in the microwave or a cold-water bath needs to be cooked before it goes back into the freezer. Quality drops a little with every freeze-and-thaw round, so freeze in portions you'll use in one go.
Does freezing kill bacteria in brie?
No. At -18°C (0°F), bacteria stop multiplying, but they aren't killed off. Once brie thaws, any bacteria that were there wake up again, so defrost in the fridge and, where relevant, bring it up to a safe temperature when you cook or reheat it.
If brie smells okay but is beyond the storage time, is it still safe?
Not necessarily. Food-poisoning bacteria usually leave the smell, appearance and taste of food unchanged. If brie has spent longer than 1–2 weeks in the fridge, discard it even if it seems perfectly normal.
