Soft Cheese Left Out Overnight: Is It Still Safe to Eat?

Data: USDA FoodKeeper plus FSIS · re-checked November 2026

Only 1 hour above 90°F (32°C)
Overnight: throw it out

A whole night on the counter adds up to many more than 2 hours in the danger zone (40–140°F).

The short answer

Soft cheese kept out at room temperature beyond 2 hours (just 1 hour once the room tops 90°F / 32°C) should go in the trash. Bacteria grow fastest anywhere from 40°F to 140°F, and some of the toxins they leave behind survive reheating.

Avoid a repeat: storing soft cheese safely

  • Wrap it first in parchment or wax paper, then add a loose layer of plastic so the cheese can breathe.
  • Keep it in the cheese drawer or on a low shelf at 40°F (4°C) or colder.
  • Cut with a clean knife every time so you don't carry mold spores into it.

Everyday cases

Typical soft cheese left-out scenarios

Buffet or party table

Put out soft cheese in small batches, and every two hours or so swap in cold servings straight from the fridge. Set cold platters over a tray of ice. Anything that has been out longer than 2 hours should be thrown away rather than returned to the fridge.

Picnic or cookout

Carry soft cheese in an insulated cooler packed with ice packs, set it in the shade, and keep the lid shut as much as you can. When it is hotter than 32°C (90°F), food sitting outside the cooler has just 1 hour.

Power outage

With the door kept shut, a fridge stays cold for roughly 4 hours, while a full freezer keeps its temperature roughly 48 hours, or 24 when only half full. After a longer outage, discard soft cheese if it has sat above 4°C (40°F) for longer than 2 hours.

Left out overnight

By the next morning, soft cheese forgotten on the counter has been in the danger zone for many hours. Even if it looks and smells normal, it needs to go. Had it gone into the fridge right away, it would have lasted 1–2 weeks.

Background

Getting to know soft cheese

Soft cheese sits in the dairy & eggs section of our food guide. The USDA FoodKeeper database files it under the name “Cheese (soft such as brie, bel paese, goat)”. Going by USDA FoodKeeper, it lasts 1–2 weeks in the fridge and 6 months in the freezer. As with any perishable food, it shouldn't spend more than 2 hours at room temperature. Best storage spot: choose a middle shelf over the door, which warms up each time someone opens it.

Cheese is essentially milk preserved with acid and salt, with much of its moisture pressed out, which is why it lasts far longer than milk does. Moisture is the biggest factor in its shelf life: hard, aged cheeses can keep for weeks or months, whereas fresh and soft cheeses act more like fresh dairy and last anywhere from a few days to about two weeks once opened.

What's happening

What makes soft cheese spoil

Cheese most often spoils by growing mold. In hard cheese the mold can't push its roots very deep, so it is fine to cut off at least 2.5 cm (1 inch) around and beneath the spot. In soft, crumbled or shredded cheese, mold can spread invisibly through the whole thing, so all of it should go in the trash. Soft cheese that is past its prime also starts to smell of ammonia as bacteria break it down.

Don't do this

Mistakes people make storing soft cheese

  • Sealing it tightly in plastic wrap, which holds in moisture and invites slime and mold.
  • Trimming mold off shredded or soft cheese and eating what's left.
  • Leaving a cheese board out in a warm room for hours.
  • Freezing soft cheese and expecting it to come out with the same texture.
Shopping

Choosing good soft cheese at the store

  • For longer life, buy a block of hard cheese instead of the pre-shredded kind.
  • Make sure packages are sealed, with no moisture or mold visible inside.
  • Choose a size of soft cheese you will use up within its opened window.
Waste less

Soft cheese: ways to finish it in time

  • Shred hard cheese and freeze it for cooking.
  • Melt it into sauces, grilled cheese sandwiches, gratins and omelets.
  • Before its time runs out, fold soft cheese into pasta, a dip or a baked dish.

How long did your soft cheese sit out?

Time on the counter so far…
Pick a time to see the verdict.
Refrigerate now

Well within the 2-hour limit. Get it into the fridge right away, spread out in a shallow dish so it chills fast.

Chill it now

OK at ordinary room temperature. If it is hotter than 32°C (90°F), though, the limit shrinks to just 1 hour, so get it into the fridge at once.

Right at the limit

The USDA cut-off is two hours. If the room was warm, or you can't say for certain how long it has been, throw it out.

Throw it out

This is over the 2-hour limit, and bacteria could have grown, or made toxins that a round of reheating won't destroy.

Toss it

Soft cheese left out overnight has sat for hours on end between 4°C and 60°C (40–140°F), the danger zone. Appearance is no guide here: it isn't safe to eat.

Anything warmer than 4°C (40°F) counts as room temperature. When it's hotter than 32°C (90°F), the limit drops to 1 hour.

Straight answers

Your soft cheese storage questions

How long does soft cheese last in the fridge?

1–2 weeks when held at 4°C (40°F) or below. Start counting on the day it was bought, opened or cooked.

How long does soft cheese last in the freezer?

6 months at -18°C (0°F) for peak quality. It remains safe for as long as it stays frozen; past that point, flavor and texture slowly decline.

How long does soft cheese last at room temperature?

2 hours at most, or 1 hour if the air is above 32°C (90°F). Throw out perishable food that has been out longer than that.

How long is soft cheese good after the expiration date?

With perishable soft cheese, time in storage counts for more than whatever the label says. Once it has spent longer than 1–2 weeks in the fridge, throw it out — even if the printed date hasn't arrived yet.

How do you know if soft cheese is bad?

A sharply sour or ammonia smell, stronger than that cheese normally has. A slimy surface, or cheese that has dried out and cracked right through. Edges that have yellowed or darkened, or colors that don't belong to that style of cheese.

How long can soft cheese sit out?

At room temperature the limit is 2 hours, dropping to 1 hour when the temperature tops 32°C (90°F). A whole night out is never safe.

Test yourself

Soft cheese myths: fact or fiction?

  1. 1.As long as it smells okay, soft cheese is still safe after being refrigerated longer than 1–2 weeks.
    You got it!
    Not this time.

False. Food-poisoning bacteria seldom alter how food smells. Keep to the 1–2 weeks window and discard anything older.

  2. 2.Putting soft cheese in the freezer kills any bacteria on it.
    You got it!
    Not this time.

False. The freezer puts bacteria on hold rather than killing them. They start up again as the food warms, so let it thaw in the fridge, then cook or reheat it all the way through.

  3. 3.Soft cheese holds up well in the freezer.
    You got it!
    Not this time.

Partly. Held at 0°F / -18°C, it keeps its quality for roughly 6 months. Expect the texture to change, so plan to cook or bake with it.

  4. 4.Soft cheese can be kept in the fridge door.
    You got it!
    Not this time.

False. Each time the fridge is opened, the door heats up. Choose a middle shelf over the door, which warms up each time someone opens it.

  5. 5.Reheating soft cheese thoroughly makes it safe after a night left out.
    You got it!
    Not this time.

False. Certain bacteria produce toxins that heat cannot destroy. Reheating kills the bacteria themselves but leaves those toxins behind, so anything left out longer than 2 hours belongs in the trash.

Frequently asked questions

How long is soft cheese safe at room temperature?
2 hours at most, dropping to just 1 hour when it's above 90°F (32°C).
If I reheat soft cheese that sat out overnight, is it safe?
No. Certain bacteria leave behind toxins that survive heat, so warming the food up won't get rid of them. When in doubt, throw it out.
Soft cheese sat out for 3 hours. Is that too long?
Yes. Once it passes the 2-hour mark, throw it away, even when it looks and smells perfectly normal.
How long does soft cheese last in the fridge?
1–2 weeks at 40°F (4°C) or colder, as long as it goes into the fridge without delay.
What temperature is best for storing soft cheese?
Set the fridge to 4°C (40°F) or below and the freezer to -18°C (0°F). The dial on a lot of fridges is optimistic and the real temperature runs higher, so a cheap appliance thermometer is money well spent. A fridge running even a few degrees above 4°C will noticeably eat into the 1–2 weeks fridge window for soft cheese.
What should I store soft cheese in?
Use parchment or wax paper inside a loosely closed bag, in the cheese drawer. You want to block air and moisture, keep smells from traveling to other food, and be able to tell at a glance how old the food is. Jot the date on the lid or on a label so there is never any guesswork about its age.
Is the fridge door a good spot for soft cheese?
Ideally, no. The door already runs warmer than the rest of the fridge, and it heats up further each time the fridge is opened. Choose a middle shelf over the door, which warms up each time someone opens it.
Can you refreeze soft cheese?
Yes, but only when it defrosted in the refrigerator and has not sat out at room temperature. Anything defrosted in the microwave or a cold-water bath needs to be cooked before it goes back into the freezer. Quality drops a little with every freeze-and-thaw round, so freeze in portions you'll use in one go.
Does freezing kill bacteria in soft cheese?
No. At -18°C (0°F), bacteria stop multiplying, but they aren't killed off. Once soft cheese thaws, any bacteria that were there wake up again, so defrost in the fridge and, where relevant, bring it up to a safe temperature when you cook or reheat it.
If soft cheese smells okay but is beyond the storage time, is it still safe?
Not necessarily. Food-poisoning bacteria usually leave the smell, appearance and taste of food unchanged. If soft cheese has spent longer than 1–2 weeks in the fridge, discard it even if it seems perfectly normal.
