Refrigerate now

Well within the 2-hour limit. Get it into the fridge right away, spread out in a shallow dish so it chills fast.

Chill it now

OK at ordinary room temperature. If it is hotter than 32°C (90°F), though, the limit shrinks to just 1 hour, so get it into the fridge at once.

Right at the limit

The USDA cut-off is two hours. If the room was warm, or you can't say for certain how long it has been, throw it out.

Throw it out

This is over the 2-hour limit, and bacteria could have grown, or made toxins that a round of reheating won't destroy.

Toss it

Caviar left out overnight has sat for hours on end between 4°C and 60°C (40–140°F), the danger zone. Appearance is no guide here: it isn't safe to eat.

Anything warmer than 4°C (40°F) counts as room temperature. When it's hotter than 32°C (90°F), the limit drops to 1 hour.

Background

Getting to know caviar

Caviar sits in the seafood section of our food guide. The USDA FoodKeeper database files it under the name “Caviar (fresh, in jar)”. Going by USDA FoodKeeper, it lasts 2 days in the fridge. Freezing is not advised. As with any perishable food, it shouldn't spend more than 2 hours at room temperature. Best storage spot: raw meat and seafood belong on the lowest shelf, sitting in a dish, so their juices cannot drip onto foods that are ready to eat.

Fish and shellfish have some of the shortest lifespans of anything sold fresh. Their tender flesh holds natural enzymes and bacteria that stay busy at fridge temperature, and oily species contain fats that oxidize fast. Plan to cook or freeze most seafood in the first day or two after you bring it home; frozen, it holds good quality for months.

Straight answers

Your caviar storage questions

How long does caviar last in the fridge?

2 days when held at 4°C (40°F) or below (opened). Start counting on the day it was bought, opened or cooked.

How long does caviar last in the freezer?

Not recommended. FoodKeeper advises against freezing caviar: the texture falls apart, or the thawed result can't be trusted to be safe.

How long does caviar last at room temperature?

2 hours at most, or 1 hour if the air is above 32°C (90°F). Throw out perishable food that has been out longer than that.

How long does caviar last after opening?

2 days refrigerated after opening. As soon as the seal is broken, the date on the package no longer counts.

How long does unopened caviar last?

1–4 weeks in the refrigerator, provided the seal is unbroken and it is stored the way the label directs.

How long is caviar good after the expiration date?

Counting from the purchase date, FoodKeeper allows unopened caviar 1–4 weeks in the refrigerator. Labels such as "best-by" and "sell-by" are about peak quality and how stores rotate stock, not about safety — infant formula is the one product whose use-by date federal law requires.

How do you know if caviar is bad?

A sharp sour, fishy or ammonia odor. Fresh fish and shellfish should smell mild, like clean sea water. Soft, mushy flesh that stays dented when pressed, or a milky, slimy coating. Flesh that has turned gray, dull or yellowish, often darker at the edges.

How long can caviar sit out?

At room temperature the limit is 2 hours, dropping to 1 hour when the temperature tops 32°C (90°F). A whole night out is never safe.

How to spot spoiled caviar

Odor

A sharp sour, fishy or ammonia odor. Fresh fish and shellfish should smell mild, like clean sea water.

Texture

Soft, mushy flesh that stays dented when pressed, or a milky, slimy coating.

Color

Flesh that has turned gray, dull or yellowish, often darker at the edges.

Shells

Live clams, mussels or oysters that gape open and stay that way after a tap.

Inspect your caviar and tick each warning sign you see

No boxes ticked? That's encouraging. Even so, confirm how long it has been stored, because the germs behind food poisoning can't be seen with the naked eye.

Even one of these means it has spoiled. Toss it, and never taste it to find out.

What's happening

What makes caviar spoil

As fish ages, bacteria break its amino acids down into compounds like trimethylamine, which is where the sharp, ammonia-like 'fishy' smell of past-it seafood comes from. Meanwhile, the fish's own enzymes turn the texture soft and mushy. Species such as tuna and mackerel carry an extra risk: if they are allowed to warm up, they can build up histamine, the cause of scombroid poisoning, and cooking won't break it down.

Don't do this

Mistakes people make storing caviar

  • Keeping live shellfish submerged in water or shut inside an airtight plastic bag, which kills them by cutting off their air.
  • Leaving fish in a warmer spot in the fridge rather than over ice or on the lowest shelf.
  • Freezing seafood a second time after it has thawed at room temperature.
  • Cooking clams, mussels or oysters whose shells stay gaping after a tap.
Freezer

Warming it up

Reheating caviar the safe way

1

Heat to 74°C (165°F)

Push a food thermometer into the thickest part; the food should steam right through to the middle.

2

Just once

Warm only the portion you plan to eat. Every round of cooling and reheating hands bacteria another opening.

3

Cover, then stir

When microwaving, put a cover on the dish and stir it midway through to get rid of cold spots.

4

Frozen leftovers

Let them thaw in the refrigerator first, or heat them directly from frozen and give them more time.

Room temperature · 2-hour rule

Caviar left out overnight

Caviar kept out at room temperature beyond 2 hours (just 1 hour once the room tops 90°F / 32°C) should go in the trash. Bacteria grow fastest anywhere from 40°F to 140°F, and some of the toxins they leave behind survive reheating.

How to store it

Keeping caviar in good shape

  • Hold it in the coldest zone of the fridge or packed on ice, keeping it at 40°F (4°C) or colder.
  • Live shellfish go in a bowl under a damp cloth — never submerged in water or shut inside sealed plastic.
  • Cook it or freeze it before the fridge window closes.
Package dates

What the dates on caviar packaging mean

Before opening

Counting from the purchase date, FoodKeeper allows unopened caviar 1–4 weeks in the refrigerator. Labels such as "best-by" and "sell-by" are about peak quality and how stores rotate stock, not about safety — infant formula is the one product whose use-by date federal law requires.

After opening

The printed date stops counting the moment the seal is broken. Allow 2 days in the refrigerator, starting on the day you open it.

Shopping

Choosing good caviar at the store

  • When tapped lightly, live clams, oysters and mussels should snap shut.
  • Good fresh fish has a mild, briny scent, like ocean water, and flesh that bounces back after you press it.
  • On a whole fish, look for bright, clear eyes and gills that are a vivid red.
Waste less

Caviar: ways to finish it in time

  • Lay fillets flat inside freezer bags and press out as much air as you can before freezing.
  • Cook it the same day you bring it home; once cooked, fish keeps 3–4 days in the fridge.
  • Within a few days, turn cooked leftovers into fish cakes, or flake them over pasta or a salad.

Caviar myths: fact or fiction?

  1. 1.As long as it smells okay, caviar is still safe after being refrigerated longer than 2 days.
    You got it!
    Not this time.

False. Food-poisoning bacteria seldom alter how food smells. Keep to the 2 days window and discard anything older.

  2. 2.Putting caviar in the freezer kills any bacteria on it.
    You got it!
    Not this time.

False. The freezer puts bacteria on hold rather than killing them. They start up again as the food warms, so let it thaw in the fridge, then cook or reheat it all the way through.

  3. 3.Caviar holds up well in the freezer.
    You got it!
    Not this time.

False. FoodKeeper advises against freezing caviar: the texture falls apart, or the thawed result can't be trusted to be safe.

  4. 4.Caviar can be kept in the fridge door.
    You got it!
    Not this time.

False. Each time the fridge is opened, the door heats up. Raw meat and seafood belong on the lowest shelf, sitting in a dish, so their juices cannot drip onto foods that are ready to eat.

  5. 5.Reheating caviar thoroughly makes it safe after a night left out.
    You got it!
    Not this time.

False. Certain bacteria produce toxins that heat cannot destroy. Reheating kills the bacteria themselves but leaves those toxins behind, so anything left out longer than 2 hours belongs in the trash.

Reader questions

Caviar: frequently asked questions

How long does caviar last in the fridge?
Caviar lasts 2 days when refrigerated at 40°F (4°C) or colder (opened). That figure comes from USDA FoodKeeper.
Can you freeze caviar?
No. FoodKeeper advises against freezing caviar: the texture falls apart, or the thawed result can't be trusted to be safe.
How long can caviar sit out?
The limit is 2 hours at room temperature, cut to 1 hour when it is hotter than 90°F (32°C). Past that point, throw it out.
How long does unopened caviar last?
1–4 weeks refrigerated. Opened, the window shrinks to 2 days refrigerated.
How can you tell if caviar has gone bad?
Odor: a sharp sour, fishy or ammonia odor. fresh fish and shellfish should smell mild, like clean sea water; Texture: soft, mushy flesh that stays dented when pressed, or a milky, slimy coating; Color: flesh that has turned gray, dull or yellowish, often darker at the edges.
Does caviar go bad after the printed date?
Counting from the purchase date, FoodKeeper allows unopened caviar 1–4 weeks in the refrigerator. Labels such as "best-by" and "sell-by" are about peak quality and how stores rotate stock, not about safety — infant formula is the one product whose use-by date federal law requires.
What temperature is best for storing caviar?
Set the fridge to 4°C (40°F) or below and the freezer to -18°C (0°F). The dial on a lot of fridges is optimistic and the real temperature runs higher, so a cheap appliance thermometer is money well spent. A fridge running even a few degrees above 4°C will noticeably eat into the 2 days fridge window for caviar.
What should I store caviar in?
Use a covered dish or a bed of ice in the coldest zone of the fridge. You want to block air and moisture, keep smells from traveling to other food, and be able to tell at a glance how old the food is. Jot the date on the lid or on a label so there is never any guesswork about its age.
Is the fridge door a good spot for caviar?
Ideally, no. The door already runs warmer than the rest of the fridge, and it heats up further each time the fridge is opened. Raw meat and seafood belong on the lowest shelf, sitting in a dish, so their juices cannot drip onto foods that are ready to eat.
Can you refreeze caviar?
Since freezing caviar isn't recommended to begin with, refreezing isn't advised either. Store it in the fridge and finish it within the fridge window.
Does freezing kill bacteria in caviar?
No. At -18°C (0°F), bacteria stop multiplying, but they aren't killed off. Once caviar thaws, any bacteria that were there wake up again, so defrost in the fridge and, where relevant, bring it up to a safe temperature when you cook or reheat it.
If caviar smells okay but is beyond the storage time, is it still safe?
Not necessarily. Food-poisoning bacteria usually leave the smell, appearance and taste of food unchanged. If caviar has spent longer than 2 days in the fridge, discard it even if it seems perfectly normal.
