Peak quality

Held at -18°C (0°F), beets are comfortably inside the 6–8 months quality window. Defrost in the fridge, then use it over the following day or two.

Peak quality

Held at -18°C (0°F), beets are comfortably inside the 6–8 months quality window. Defrost in the fridge, then use it over the following day or two.

Use it up soon

Safe, though it is reaching the end of peak quality. Plan to use it within a few weeks, since flavor and texture decline after 6–8 months.

Safe, but quality has slipped

Staying frozen solid keeps food safe with no time limit, but by 9 months you can expect flat flavor and some freezer burn. Use it in soups, sauces or baking, and cut away any dry gray patches.

Background

Getting to know beets

Beets sit in the vegetables section of our food guide. Going by USDA FoodKeeper, they last 1–2 weeks in the fridge, 1 day in the pantry and 6–8 months in the freezer. They fall into the lower-risk group, so storing them well is mostly about keeping quality rather than about safety. Best storage spot: the crisper drawer keeps moisture in, and that humidity stops produce from going limp.

Fruits and vegetables don't stop living when they are picked: they keep respiring, ripening and giving off moisture. Their shelf life depends on the variety, how ripe they were when you bought them, and if they have been cut or left whole. Many do best in the crisper drawer, though some ripen properly and develop better flavor on the counter first.

6–8 months at -18°C (0°F) for peak quality. It remains safe for as long as it stays frozen; past that point, flavor and texture slowly decline.

How long do beets last at room temperature?

1 day somewhere cool and dry.

How long is beets good after the expiration date?

Beets kept in good conditions are generally still safe after their best-by date. Before use, inspect the odor, appearance and flavor.

How do you know if beets are bad?

A musty, sour or fermented smell. Spots that are mushy, soft or weeping, or skin that has wrinkled over soft flesh. Bruises that darken and spread, or browning on the inside.

How to spot spoiled beets

Odor

A musty, sour or fermented smell.

Texture

Spots that are mushy, soft or weeping, or skin that has wrinkled over soft flesh.

Color

Bruises that darken and spread, or browning on the inside.

Mold

White, gray or green fuzz: throw soft produce away; on firm produce, cut well around it.

Inspect your beets and tick each warning sign you see

No boxes ticked? That's encouraging. Even so, confirm how long it has been stored, because the germs behind food poisoning can't be seen with the naked eye.

Even one of these means it has spoiled. Toss it, and never taste it to find out.

What's happening

What makes beets spoil

Produce spoils through a combination of overripening, drying out and microbes. Fruit that is ripening gives off ethylene gas, which hurries along the ripening of anything nearby. Bruises and cuts break open cell walls and give mold and bacteria a way in, which is why cut fruit and vegetables have to be refrigerated and eaten within a few days.

Don't do this

Mistakes people make storing beets

  • Washing produce before it goes into storage; the extra moisture makes mold grow faster.
  • Keeping ethylene-releasing fruit (apples, bananas, avocados) beside produce that ripens too quickly.
  • Letting cut fruit or vegetables sit at room temperature longer than two hours.
  • Sealing fruit and vegetables in airtight bags that let no air move.
Freezer

Can you freeze beets?

Yes — it freezes wellHeld at 0°F / -18°C, it keeps its best quality for roughly 6–8 months. Food that stays frozen remains safe indefinitely; only the quality slips over time.
  1. 1Step 1

Wash, dry and cut it up; most vegetables need 1–3 minutes of blanching before they go in.

  2. 2Step 2

Freeze the pieces in one layer on a tray, then move them to a bag and squeeze out the air.

  3. 3Step 3

Cook or blend it straight from frozen; produce goes soft once it thaws.

Defrosting

Safe ways to defrost beets

In the refrigerator

Move it from freezer to fridge the evening before you need it; this preserves the texture best.

On the counter

Suitable only for shelf-stable foods; perishables should never be thawed at room temperature.

Straight from frozen

Plenty of foods can go directly into the oven, a soup, a sauce or a smoothie.

Room temperature · 2-hour rule

Beets left out overnight

Beets are shelf-stable, so an overnight stay on the counter does no harm. Store them somewhere cool and dry, out of direct sun.

How to store it

Keeping beets in good shape

  • Wait to wash it until just before you eat it; it keeps better unwashed.
  • Keep fruit that gives off ethylene, such as apples, bananas and avocados, apart from produce that ripens too quickly.
  • Once it has been cut, keep it covered in the fridge.
Package dates

What the dates on beets packaging mean

Best-by vs. sell-by

Counting from the purchase date, FoodKeeper allows unopened beets 1 day on the pantry shelf or 1–2 weeks in the refrigerator. Labels such as "best-by" and "sell-by" are about peak quality and how stores rotate stock, not about safety — infant formula is the one product whose use-by date federal law requires.

Past the printed date

Beets kept in good conditions are generally still safe after their best-by date. Before use, inspect the odor, appearance and flavor.

Shopping

Choosing good beets at the store

  • Skip anything with bruises, soft patches or mold.
  • Mix ripe pieces with less-ripe ones so everything doesn't peak on the same day.
  • Buy cut produce only from a refrigerated display.
Waste less

Beets: ways to finish them in time

  • Freeze ripe fruit to use in smoothies and baking.
  • Roast or sauté vegetables as soon as they start to go soft.
  • Puree tired produce into soups, sauces or juices.

Beets myths: fact or fiction?

  1. 1.As long as they smell okay, beets are still safe after being refrigerated longer than 1–2 weeks.
    You got it!
    Not this time.

Partly true. Because beets are low-risk, going slightly beyond 1–2 weeks usually costs quality rather than safety. Look for mold and sniff for off odors first.

  2. 2.Putting beets in the freezer kills any bacteria on them.
    You got it!
    Not this time.

False. The freezer puts bacteria on hold rather than killing them. They start up again as the food warms, so let it thaw in the fridge, then cook or reheat it all the way through.

  3. 3.Beets hold up well in the freezer.
    You got it!
    Not this time.

True. Held at 0°F / -18°C, it keeps its best quality for roughly 6–8 months. Food that stays frozen remains safe indefinitely; only the quality slips over time.

  4. 4.Beets can be kept in the fridge door.
    You got it!
    Not this time.

False. Each time the fridge is opened, the door heats up. The crisper drawer keeps moisture in, and that humidity stops produce from going limp.

  5. 5.Beets have to go in the fridge to stay safe.
    You got it!
    Not this time.

False. Beets are shelf-stable and keep 1 day somewhere cool and dry. For some foods the fridge can stretch out quality, but safety does not depend on it.

Reader questions

Beets: frequently asked questions

How long do beets last in the fridge?
Beets last 1–2 weeks when refrigerated at 40°F (4°C) or colder. That figure comes from USDA FoodKeeper.
Can you freeze beets?
Yes, you can. Held at 0°F / -18°C, it keeps its best quality for roughly 6–8 months. Food that stays frozen remains safe indefinitely; only the quality slips over time.
Do beets need to be refrigerated?
No, not for safety reasons. Beets last 1 day in a pantry that stays cool and dry.
How can you tell if beets have gone bad?
Odor: a musty, sour or fermented smell; Texture: spots that are mushy, soft or weeping, or skin that has wrinkled over soft flesh; Color: bruises that darken and spread, or browning on the inside.
Do beets go bad after the printed date?
Beets kept in good conditions are generally still safe after their best-by date. Before use, inspect the odor, appearance and flavor.
What is the source for these storage times?
They come from USDA FoodKeeper, the food storage database run by the USDA Food Safety and Inspection Service (FSIS). We last checked this page against the current FoodKeeper release.
What temperature is best for storing beets?
Set the fridge to 4°C (40°F) or below and the freezer to -18°C (0°F). The dial on a lot of fridges is optimistic and the real temperature runs higher, so a cheap appliance thermometer is money well spent. A fridge running even a few degrees above 4°C will noticeably eat into the 1–2 weeks fridge window for beets.
What should I store beets in?
Use a loose or vented bag in the crisper drawer, left unwashed until you use it. You want to block air and moisture, keep smells from traveling to other food, and be able to tell at a glance how old the food is. Jot the date on the lid or on a label so there is never any guesswork about its age.
Is the fridge door a good spot for beets?
Ideally, no. The door already runs warmer than the rest of the fridge, and it heats up further each time the fridge is opened. The crisper drawer keeps moisture in, and that humidity stops produce from going limp.
Can you refreeze beets?
Yes, but only when they defrosted in the refrigerator and have not sat out at room temperature. Anything defrosted in the microwave or a cold-water bath needs to be cooked before it goes back into the freezer. Quality drops a little with every freeze-and-thaw round, so freeze in portions you'll use in one go.
Does freezing kill bacteria in beets?
No. At -18°C (0°F), bacteria stop multiplying, but they aren't killed off. Once beets thaw, any bacteria that were there wake up again, so defrost in the fridge and, where relevant, bring it up to a safe temperature when you cook or reheat it.
If beets smell okay but are beyond the storage time, are they still safe?
With a low-risk food such as beets, going beyond the storage time generally affects quality rather than safety. Look for mold, sniff for off odors and notice any strange taste, and get rid of them if anything seems wrong.
